Raspberry and Coconut Cupcakes with Cream Cheese Frosting

Hello everyone!

Today's recipe is now one of my favorites! I hadn't planned to do it at all like this, I just found some beautiful raspberries at the market and I couldn't resist buying them. I tweaked a little bit one of my favorite cupcake recipes and this came out!


Don't they look amazing? And I can promise you they tasted amazing as well! I brought them as a dessert for lunch with some friends and we simply had to eat two each. Afterwards, when I took the photos of the remaining ones, I had to give them away to my neighbors so I did not have the temptation to scarf them all!


They are dangerous, mind you... The cupcake itself is so fluffy, not heavy at all. The raspberries inside give them a great touch of acidity amongst the sweetness of the cake and the coconut. And the cream cheese frosting is so fresh and light... I could probably sing the greatness of this cupcake all day, really.


Here's the recipe. I should warn you, you will want to eat them as soon you take out of the oven- they smell deliciously. Just wait. The frosting needs for them to be completely cooled down, otherwise it will melt. I promise it will be worth it!

"Vanilla Ice cream" Mini Cupcakes

Hello everyone!

Today I will show you a recipe that I have wanted to do for a while now. 


Aren't they cute? I have seen them in Pinterest for some time now but those kind of ice cream cones aren't something that you come across easily here. So when I found them in the supermarket I was ecstatic. At last!

I must say that I have also seen the "Pinterest fails" that this recipe has brought to some bakers as well... I was afraid that this would be my fate too and, as a matter of fact, it was:



Oh, the horror! Normally, when I bake, I use the time when the cupcakes are in the oven to clean up the kitchen but with this recipe, all I could do was pace in front of the oven and hold my breath. Imagine my dismay when I saw that the batter was overflowing!!!

I'm not going to lie, I was pretty devastated. Most of them turned out to be like this:


Ugh.

However, when I tasted one, they were good so I decided to keep going.


And they turned out pretty great after all!

Oreo Cupcakes

Hello everyone!

Today's recipe is also one of my favorites. It takes a little bit of time to do but is definitely worth it.




Oreo cupcakes!




I made those to celebrate the birthday of one of my closest friends who, get ready for this, doesn't like chocolate.

Awful. I know.

She does not like chocolate but she likes Oreo cookies and she loves my Oreo cupcakes. Maybe you have seen this recipe in other blogs and their ingredients include two tablespoons of pure cocoa. I skip this step for my friend's benefit, and although the cupcakes are dark, it's because of the pulverized cookies in the batter.




The frosting is not the usual either. Truth is that I cringe a little bit when I see recipes that require 400g of confectioner's sugar only for the frosting or buttercream. I know, they are delicious but, with so many sugar? Is that good? So I have created a new frosting for these cupcakes and, although my friends kind of missed the old one, they did say that it tasted as if it was the cream inside the Oreo cookies.

Dark Chocolate and Pistachios Cupcakes

Hello everyone!
Today's recipe is very (very) chocolate-y. I took it from gimmesomeoven's blog but I modified it a little bit. I have added the pistachios and changed the frosting because, as much as I love chocolate, it would have been too rich for some people; so instead of the dark chocolate ganache she did, I have changed it into a mousse.

The results:


What would have been a too-rich ganache -I insist, for some people only- it's been turned into a mousse that contrasts perfectly with the salty pistachios.

For my first post I have decided to do some Red Velvet cupcakes.




They look yummy, right?

The cupcakes' name makes them justice because this cupcake is not only red but its texture is amazingly soft- just like velvet!

There are a lot of recipes on the internet to make these cupcakes but I have decided to use one from Martha Stewart.
