Dark Chocolate and Pistachios Cupcakes

Hello everyone!
Today's recipe is very (very) chocolate-y. I took it from gimmesomeoven's blog but I modified it a little bit. I have added the pistachios and changed the frosting because, as much as I love chocolate, it would have been too rich for some people; so instead of the dark chocolate ganache she did, I have changed it into a mousse.

The results:


What would have been a too-rich ganache -I insist, for some people only- it's been turned into a mousse that contrasts perfectly with the salty pistachios.

Cakeballs

Hello everyone!

Today's recipe is really easy. You could say that is not even a recipe; truth be told, it is something you can do in very little time and it does not need baking if you have the necessary ingredients ready.


Cakeballs! Maybe you have seen in some store of household appliances a machine that is built to do cakeballs. In my opinion, those are not necessary since the point of making cakeballs is using spare cake so it does not go to waste.

Mini carrot-and-walnuts cake with cream cheese frosting

Today's recipe is one of my favourites. I usually do cupcakes instead but I wanted to give it a different form today. 



Cute, right?

It is actually delicious; the cake is spongy and the cream cheese frosting is really light, very different from the usual-4-cups-of-sugar recipes that you can find everywhere.

White Chocolate Tart with Fresh Berries

Hello everyone!

Today's recipe can be done in little time and gives really good results. Some days ago I started seeing fresh berries (raspberries, blackberries, blueberries and currants) in the supermarket. They are sold in tiny little boxes and are pricey but they look so appetizing that I couldn't resist!




I love to bake with berries because I love the way their acidity contrasts with the sweetness of the cakes. However, if I can buy them fresh, I'd rather not bake them in order to preserve their freshness.




That's why I was thrilled when I found this recipe in Simply Delicious. She bakes tartelettes in her recipe but I did not have the time to do them so I did a normal sized tart instead. 



And it was delicious! It's fresh, smooth and tremendously light; just perfect for a summer afternoon.
