Summer Pies: Raspberry Mini Pies

Hello everyone!
Here I am, with another recipe for the "Summer Pies" series. This time, with completely natural and organic raspberries from my cousin's orchard!



He has an amazing orchard in Esterri d'Àneu, a small village in the north-west of Catalunya. And he gave me permission to go there and take as many raspberries as I wanted! I got a few scratches on my arms but it was totally worth it. The berries were sweet with the right amount of tartness, warmed by the sun, some of them so ripe that would automatically fall between your fingers. 


So I ended up coming back home with a basket full of fresh raspberries and the fingers stained by their juices. Thinking that I really did not have much of a choice but to bake something great with them. 



And I did! The pie crust (from scratch) is, again, from Baking a Moment's blog.

Summer Pies: Peach Pie

Hello everyone!

Today's recipe belongs to my "Summer Pies" series again. But today, and for the first time in my blog, I made the pie crust!




The recipe for the pie crust is from Baking a Moment's blog, and she has a great tutorial with photographs and tips that will help you make the best pie crust ever.



Every time I intended to do my own pie crust, it turned out badly. I tended to over-roll it, I guess, because the texture I achieved had nothing to do with this one. 



And the results are great. I used this recipe twice in a week and, on the second time, I added a handful of raspberries and it tasted great as well.

"Vanilla Ice cream" Mini Cupcakes

Hello everyone!

Today I will show you a recipe that I have wanted to do for a while now. 


Aren't they cute? I have seen them in Pinterest for some time now but those kind of ice cream cones aren't something that you come across easily here. So when I found them in the supermarket I was ecstatic. At last!

I must say that I have also seen the "Pinterest fails" that this recipe has brought to some bakers as well... I was afraid that this would be my fate too and, as a matter of fact, it was:



Oh, the horror! Normally, when I bake, I use the time when the cupcakes are in the oven to clean up the kitchen but with this recipe, all I could do was pace in front of the oven and hold my breath. Imagine my dismay when I saw that the batter was overflowing!!!

I'm not going to lie, I was pretty devastated. Most of them turned out to be like this:


Ugh.

However, when I tasted one, they were good so I decided to keep going.


And they turned out pretty great after all!
