Apple and Cinnamon Muffins

Hello everyone!

Here I come with yet another apple recipe. I know that recently I have been using apples for other recipes like the Apple Crumble or the Caramelized Apple Tartlets. The thing is, all these apples come from my parents orchard and I need to use them before they go bad. And there's a lot of them, believe me.


So I have to come up with new recipes and these Apple and Cinnamon Muffins turned out to be really good. Truth is, you can hardly go wrong by combining these two ingredients. 


These muffins are a great idea for breakfast or an afternoon snack. Plus your home will smell amazing after baking them!





Apple and Cinnamon Muffins

Ingredients (yields 8 medium muffins)

  • 85g wholemeal flour
  • 70g flour
  • 1 ½ tsp baking powder
  • 1 tsp cinnamon
  • 40g brown sugar
  • 2 small apples
  • 125ml milk
  • 1 egg
  • 30g butter (melted)

Topping:

  • 50g brown sugar
  • 1 tsp cinnamon


Directions


  • Preheat the oven at 200ºC (392ºF).
  • In a medium bowl, mix both flours, baking powder and cinnamon.
  • Peel and cut the apples in small pieces. Add them to the previous mix, along with the brown sugar and mix well.

  • Beat the egg and add milk and melted butter. Add it to the dry mix and stir gently with a spatula until everything is incorporated. Do not overmix!
  • Pour the batter in the liners.
  • In a small bowl, mix the brown sugar and cinnamon. Sprinkle a teaspoon of the mixture on each muffin, as a topping.

  • Bake for 25-30 minutes.
  • Let them sit for 10 minutes and eat them warm.
